Guava Shortbread Cookie Recipe

It hard to believe that the Holiday season is upon us but it’ll be here before we know it. This time of year brings such nostalgia for me because every year my great abuelita would stay with us. Though she is in Puerto Rico right now, I can continue the traditions I had with her with my own kids. Listening to Salsa music while baking in the kitchen is something I do now in my own home with my little family. The smell of cinnamon and vanilla lingers in my kitchen around this time of year with all the baking I’m doing. When I’m not baking I have that scent lingering around my house thanks to Glade® Winter Collection. I tend to prefer the sweet scents around my home around the Holidays – when my friends and family walk inside my house they immediately say it smells like sugar cookies!

One of my all-time favorite Holiday recipes is my grandmother’s Polvorones or Mantecaditos with Guava. It’s a shortbread cookie with Guava paste in the middle. It provides the perfect amount of sweetness that complements the shortbread cookie. I am a huge fan of guava – guava pastries, guava cake filling, you name it and I love it. My grandma says she’s been using this recipe for years and my great grandmother used to use it too! Every time I make these around the Holidays, I bring a box of cookies to share with my friends and co-worker. They love them!

Guava Shortbread Cookie Recipe
• 2 cups flour (plus extra for dusting)
• ½ cup sugar
• ½ cup soften butter
• ½ cup shortening
• 1-teaspoon pure almond extract
• Guava paste
• Cookie cutters

Directions:
Start by pre-heating your oven to 350 degrees F. Using a mixer (or your hands) combine the softened butter and shortening in a bowl until creamed. (It’ll look fluffy). Slowly add the sugar and mix well. Next, gradually add the flour into the mixture. Lastly, add the pure almond extract.

You can place your dough in the fridge for about 15 mins. I noticed it helps when I’m rolling the dough. While the dough is in the fridge start cutting your guava paste into small rectangular pieces to fit the width of your cookies. Set aside. Using a rolling pin, roll the dough so it is smooth. Using your cookie cutters, cut your shapes (I did only 19 completed cookies). Cut your bottoms then cut the top pieces. You will need another cookie cutter to make the hole on the top cookie layer for the Guava to peek through.

To assemble the cookies – grab a bottom cookie piece, layer guava on top, then take another cookie piece with the hole and layer on top. There are cookie cutters that do all of this very easily. Once you’ve assembled all the cookies – put them in the oven for about 15-20 mins. They should be golden on the bottoms and edges but lighter in the middle. Then you are done! Enjoy your delicious cookies!

Every time I bake or eat these cookies, my house smells so sweet! Reminds me of Glade® candles I burn around the house. Every time I smell the hint of cinnamon it reminds me of my shortbread cookies. Sharing my cookie recipe with friends and family brings me so much joy because they appreciate the work that goes into creating the perfect shortbread cookie. When I make a large batch of cookies I include my kids in the process – they love using the cookie cutters. It makes them feel happy that they will be sharing their cookies with friends and family. It is a great lesson for them to learn – doing something nice for others.

What do you do for the Holidays that bring your friends and family joy? For me, it is baking cookies and sharing it with those I love most.     Love shortbread cookies but I have never tried them with guava before!
    Wish I had of seen it yesterday when I was whipping up a batch of mom’s shortbread cookies.
    Will have to make another batch and find out!

    Shortbread cookies are one of my favorites…I almost have to avoid them from time to time because I just eat too much of it! My sister bakes these and did not want to share her recipe, so I am glad you posted yours so I can have something to experiment with! Thanks for sharing!
